Last night I cooked a nice dinner for Joe and I after completing a big grocery shopping trip. The trip was much needed because my cupboards and fridge were looking bad. After stocking up on the goods, I came home and made a delicious meal.
The meal was steak, sautéed onions as a topper, and goat cheese stuffed mushrooms which were surprisingly easy to make.
First I cleaned 8 whole mushrooms and ripped out the center and stems. Some recipes online said you could scoop them out with a spoon, but I found this hard and the mushroom caps were breaking. By grabbing the stems and wiggling them back and forth I was able remove the middles.
I then placed the caps in a sauté pan that I spritzed with an olive oil spray. I didn’t want to cook them in too much oil since I was trying to keep them as healthy as possible. After cooking them for 5-10 minutes like that, I removed them and threw some chopped green onions into the pan (just with whatever olive oil spray was leftover). I let those cook for a few minutes and then combined them with goat cheese, pepper, and a dash of olive oil.
Before putting the cheese in the caps I put the mix in the microwave for about 10 seconds just to soften it up enough to stir everything all together. Then I just scooped some cheese into the caps and baked them at 400 for about 15 minutes. Easy and a great light side dish!
This recipe is also good because you can mix up the filling with different ingredients. I’m looking forward to trying a goat cheese and spinach filling next! Green onion was definitely a winner though.
Last night was fun. I got dressed up to go out to a bar called the Field House in Philly. It was definitely my kind of place. There was live music that I swear was playing ALL of my favorite songs, plenty of placed to sit, and it wasn’t too loud. Definitely a winner. I know everyone’s different, but I just don’t find fun in going to crazy crowded places where you can’t get a table and talk. I’m probably just an old fuddy duddy though…
P.S. I’s wear these boots anywhere if I could….
Off to have a fun and productive Saturday!
ok this is a really nice looking dish that I might actually be able to do and impress people! I'm the queen of casserole's so this would look very impressive for me
